What is the best type of replacement Safe Edge unit to install on a Dover DMC?

You don’t need a Gatekeeper, just the cheaper Cedes or Janus edge. Just go with whichever you prefer. The important thing with a DMC is if you have fire recall and your jurisdiction requires reduced speed closing, make sure the software supports CLC adjustment 20 or you will need to upgrade the software. Jump EE and wire edge detector to SE.
